The kids and I are in Baltimore for most of Pesach, which means that I get to raid my mother’s recipe box. You know, the kind that’s jammed packed with stained 3 x 5 cards and newspaper clippings, all bearing the secrets to the foods of my childhood.
Since there’s still time, and you probably have cake meal to spare, try these unnamed jelly-matzoh-thumbprint cookies, which I loved as a kid, and still think are pretty good (for Passover, that is.)
2 eggs
3/4 c. sugar
1 c. cake meal
2 T potato starch
1/2 c. shortening (I used butter, can’t stand Passover margarine…)
jelly
mix ingredients together. form dough into balls ~1.5 inches diameter. roll in white sugar. press a thumb sized hole into the middle of each cookie and fill with jelly. bake at 375 (preferably on parchment) until done (10-15 minutes?)
Funny…that’s where I live!
Will try your cookies tomorrow.
Sheri;)
let me know how you like them (or maybe you could just drop one off at my mom’s house….!)
Those look so yummy. I havemade two different brownie recipes this year I yum!!! Maybe I have time to try these too…..
did you post the recipes? i don’t see them on your blog-
Can’t wait to tell my grandchildren about your homeshuling website. It’s wonderful! The passover cookies look yummy. I think Ethan and Andrew would love making them for Passover. It sounds like all the grandsons are coming to Auntie Sara’s for the first seder in Sommerville. This way Jonah (20months) can be put to bed when he needs to be in his own crib. We(Bubbe and Zady) had our first Skype meeting with baby Ari Eli in Lincoln,NH this morning!!!!!!!
My kids & I just did a trial run on this recipe (with ingredients left over from last year), and they turned out great. I am delighted! The dough started off too sticky, so I did have to add an extra few Tbsp cake meal and an extra heaping Tbsp potato starch until the dough was moist but stiff enough to roll into balls. We also added a splash of vanilla (KLP vanilla is available here) and a dash of cinnamon. I think we may add some grated orange peel too next time. We baked for 10 minutes, and they turned out nice and soft — I think 15 mins would be too long. My kids are very excited at how they turned out. Thank you!
Here is another great recipe for Pesachdike cookies:

I hate all margarine, long live butter.
I gave this recipe to one of my friends and she said she missed being able to use Crisco! Eeek.
